Lovejoy's Pepper Chicken Recipe by Damaris Chevalier

A bright, savory take on stir-fry—infused with the bold flavor of Lovejoy’s Bloody Mary Mix.
This easy recipe brings together tender chicken, vibrant bell peppers, and zesty Bloody Mary marinade for a meal that’s as satisfying as it is simple. Thanks to Damaris Chevalier for this delicious creation!

Ingredients:

  • 1 chicken breast

  • 1 small green bell pepper

  • 1 small red bell pepper

  • ½ small onion

  • ½ cup Lovejoy’s Bloody Mary Mix

  • Olive oil (for cooking)

Instructions:

  1. Cut the chicken breast into small strips. Add to a bowl with Lovejoy’s Bloody Mary Mix and let it marinate for at least 1 hour in the refrigerator.

  2. While the chicken is marinating, slice the bell peppers and onion into strips.

  3. In a medium saucepan, heat a small amount of olive oil and sauté the peppers and onion until tender-crisp.

  4. In a separate pan, heat olive oil and cook the marinated chicken until it's tender and no longer pink.

  5. Combine the cooked chicken with the sautéed vegetables and stir to blend all the flavors.

  6. Serve hot—enjoy it on its own or spooned over white rice or quinoa for a satisfying, healthy meal.
