Recipe by Mama Lovejoy
INGREDIENTS:
- 1 tablespoon olive oil
- 3 lbs. of oxtails
- 1 medium onion (chopped)
- 3 garlic cloves (diced)
- 3 or 4 carrots (chopped)
- 1 can of diced tomatoes
- 1 cup Lovejoy’s Bloody Mary Mix
INSTRUCTIONS:
- Wash oxtails and dry with a paper towel. In a 5-quart skillet, heat olive oil over medium heat until it is very hot
- Braise oxtails until brown
- Divide oxtails into several batches, if necessary
- Remove from skillet
- In the drippings, sauté onions and garlic until tender
- Add carrots, tomatoes, and Lovejoy’s Bloody Mary Mix
- Add Oxtails back into the skillet
- Cover and place in oven for 2 hours or until the oxtails are tender
- Serve over hot rice, with potatoes, or egg noodles, and/or with corn bread
- For an extra punch in the face add Lovejoy’s Burn Yo hot sauce!
